
When the temperature rises , so does my cravings for strawberries . The family was coming over and I wanted to have something sweet and refreshing for everyone while we hung out by the pool.
No-Bake Strawberry Icebox Cake ! On hot days we all need a cool slice of strawberry heaven. The recipe is simple and just needs time for it to get the right consistency.
Ingredients
- 1 1/2 sm. cartons of strawberries
- 1 box of graham crackers
- 2 cans of Reddi wip non- dairy coconut milk ( Can use wip of your preference or cool whip)
Method
- Spray a spreadable amount of reddi wip topping on the bottom of a 7×12-inch baking pan.
- Place five graham cracker sheets down the middle and break two more sheets into crackers to fit down the sides.
- Lightly cover the top of the graham crackers with more reddi wip topping and then a layer of sliced strawberries.
- Repeat three times, until you have three layers of graham crackers.
- Last layer, wip topping , with strawberries placed (be creative or just scatter) and graham cracker crumbles.
- Refrigerate covered for at least four hours, or until the crackers have softened completely.
